Pork Chops and Pineapple with Chili Slaw

 
Ingredients -

8 (1/2-inch) cuts Boneless Top Loin Pork Chops (1-1/2 pounds total)
1-1/2 teaspoons Chili Powder
1/2 of cored Fresh Pineapple, sliced
3 tablespoons Cider Vinegar
2 tablespoons Orange Juice
2 tablespoons Olive Oil
1 tablespoon Sugar
1/3 small Green Cabbage, cored and sliced (about 5 cups)
1/2 Red Onion, thinly sliced
1 small Red Sweet Pepper, cut in strips

 
Preparation:

1. Sprinkle both sides of the pork chops evenly with salt and 1 teaspoon of chili powder.

2. Preheat a charcoal grill.

3. Grill the pork chops and sliced pineapple directly on the grill for 6 to 8 minutes or until the chops are done, turning once.

4. In a large bowl, combine the vinegar, juice, oil, sugar and remaining chili powder.

5. Add the onion, cabbage and sweet pepper.

6. Toss well to combine.

7. Season with salt and pepper, to taste.

8. Serve the pork chops with the pineapple and slaw.
